Winter warming soup

It's the time of year again for soup! And here is one that is super easy (3 key ingredients only needed- an onion, sweet potato and a tin of coconut milk). Perfect for those chilly winter days. This one is quite a sweet soup so if you prefer pumpkin or butternut squash it works just as well instead of sweet potato.

Makes: 4-5 bowls


Preparation: Less than 5-10 minutes


Cook time: 30 minutes


Ingredients

  • 1 tbsp vegetable oil

  • 1 white onion, chopped

  • 750g sweet potatoes (2 medium or 1 large roughly) chopped into small chunks

  • Full can coconut milk

To taste;

  • x3 gloves of garlic chopped (optional)

  • 1-2 tsp coriander

  • 1-2 tsp cumin

  • 250 ml milk (or hot water to make it vegan)

  • A pinch of salt (to taste)

  • A handful of fresh coriander to finish


Method

  • Peel and chop the white onion into small pieces

  • Peel and chop the garlic cloves into small pieces

  • Heat the oil in a deep saucepan, then soften the onion for 4-5 mins

  • Stir in the cumin and coriander spices and cook for 1 min more until fragrant.

  • Add the chopped sweet potato and stir in the coconut and seasoning and cook for 30 minutes on a medium heat or until the sweet potatoes are soft

  • Cool briefly before whizzing with a stick blender until smooth.

  • Sprinkle with fresh coriander

  • Tip- if soup mix is thick and milk or water!
