Winter warmer tray bake recipe

As we head into winter, and with the flu and cold season underway, it's time to start sharing some warming recipes to keep us healthy over the colder season. Here is my recipe for a winter tray bake - really simple and hearty, with plenty of options!


Prep time: 15 minutes

Cooking time: 30-45 minutes (depending on oven!)

Ingredients needed:

-X1 large sweet potato

-x1 Aubergine (alternative is courgette, or red pepper)

-x1-2 fresh tomatoes

-x2 carrots

-x1 red or white onion

-x2 tins of chopped tomatoes

-seasoning - x1 tea spoon of black pepper, paprika and cumin

-Honey (just a drizzle)

-Grated cheese to finish


Recipe

  1. Start by peeling chopping an onion into slices

  2. Peel the sweet potato and shop into small chunks (they cook quicker!)

  3. Peel the carrots and chop into slices

  4. Cut the aubergine (or courgette) into small slices

  5. Cut the tomatoes up into small chunks

  6. Place all the vegetables into a roasting tray

  7. Open both tins of chopped tomatoes and add it to the vegetables

  8. Mix the vegetables in with the chopped tomato

  9. Season with the cumin, paprika and a sprinkle of black pepper

  10. Mix it together with the vegetables and chopped tomatoes

  11. Drizzle 1/2 a teaspoon of honey over the tray bake vegetables

  12. Cook in the oven for 30-45 minutes at 180 degrees C (or until the sweet potatoes, carrots and aubergine are soft!)

  13. Grate cheese on top to finish for the last 10 minutes of cooking

  14. Serve with salad or couscous

  15. Sit down and enjoy!


Alternative options

-Mix in a tin of chickpeas for extra protein (they cook super quick, so only need 10 minutes to cook at the end!)

-Change sweet potato for swede or normal potato to give some variety

-Change aubergine for courgette

-Put at few tea spoons of pesto from a jar on top for a tasty alternative to grated cheese
