Here's a super quick and easy recipe as we welcome in the Spring using seasonal vegetables. From start to finish (including prep!) takes approximately 20 minutes. It's a great one for a quick easy dinner with green veggies!
Ingredients
- Dried Spaghetti Pasta (One handful per person roughly or gluten free spaghetti option!)
-X1 packet of asparagus spears (approx 250gram bag)
-x1 small packet of green beans (approx 80-110gram bag)
-x1 small pot - 300 ml crème fresh (or lactose/dairy free alternative could be used)
-Half a packet of fresh parsley (approx. 15 grams from a 30g bag!)- chopped finely
-a bunch of fresh spring onions
-To taste: Salt, pepper, a few squeezes of lemon juice (bottle or fresh works well!)
-Options to add in depending on dietary requirements
-Fresh packet of Smoked salmon (full 120 gram packet cut into small pieces)
-Feta cheese to finish (sprinkled in!)
Preparation: 5 minutes maximum!
Chop the fresh parsley finely
Chop the green beans in half
Chop the asparagus into 3rds
Chop the spring onions into small slices
How to prepare:
Cooking time 12-15 minutes
Cook the pasta in a large saucepan (needs to be big enough as everything will go in here!) and drain when cooked.
Boil the asparagus and green beans together for approximately 5 minutes or until soft
Drain the asparagus and green beans and add to to cooked pasta
Add the full pot of crème fresh, stir well and heat on a low heat (keep stiring to avoid it sticking!)
Add the freshly chopped parsley and spring onions
(if you want to add smoked salmon add it now/feta cheese)
Add salt/pepper and a squeeze of lemon juice to taste
